Student union eateries focus on nutrition

Anyone who eats at the lower-level food court or the second-floor shops in Northwest Missouri State University's J.W. Jones Student Union is going to notice some changes this fall.

First of all, Aramark Higher Education, the university's food service contractor, has made a concerted effort to provide students, faculty, staff and campus visitors with a wider variety of healthy food options.

Secondly, for those who consider pepperoni and cheese one of the four basic food groups, the union is home to a new Papa John's pizza stand.

On the healthy side of that equation, Aramark is introducing "meatless Mondays," during which a number of the food court's branded service bars will offer vegetarian entrees. The Good 4U counter, for example, was serving up spinach and cheese calzones yesterday, along with plates of black bean veggie burgers and sides of waffle-cut sweet potato fries.

Aramark District Marketing Manager Kristin Helmink said the new emphasis on nutrition, which includes snack displays stocked with pita bread chips and baked potato chips, is based on the food vendor's response to its most recent student survey...
